Rascals Recipes: Siamese Dream Marinade

 

 

This is an extremely simple but utterly delicious marinade, especially suited for salmon or chicken. In a food processor you need to blend up a red onion, four garlic cloves, a small piece of fresh ginger, three or four chilis and a handful of fresh coriander leaf and a good pinch of black pepper.

Once blended, keep whizzing and slowly add two tablespoons of honey, two tablespoons of toasted sesame oil, a tablespoon of dark soy sauce and the juice of half a lime.

You should now have a reasonably thick paste, to which you’re going to add, and whisk by hand in a bowl, at least half a can of Siamese Dream pale ale.

Now it’s ready to marinade your salmon or chicken, for at least twelve hours or overnight.

 

 

Fire up the BBQ, bosh on the meat or fish, wang together a few accompaniments and fling everything onto your table. If you reserve some of the marinade you can baste a few steaks too. Beautiful. Although it’s geographically completely at odds with the Far Eastern tropical theme, we did up a caprese salad because it’s just such a damn good salad. Throw a few ears of corn and chunks of seasoned Halloumi on the grill too and you’re all set to go.
