This Is Our Story

Rascals Brewing was founded in 2014 by Emma Devlin and Cathal O’Donoghue. The pair were living and working in New Zealand and developed a taste and passion for the booming Kiwi craft beer industry. In the spirit of adventure, they decided to change careers entirely and set up their own craft brewery back home in Dublin. Since then, Rascals has brewed all manner of wonderful beer, from Chardonnay Saisons to Mint Choc Stouts to Strawberry Vanilla Milkshake IPAs.

 

We love to take traditional beer styles and give them a Rascals twist. Rascals Brewery, Inchicore, Dublin

We’ve quite a busy 30HL brewhouse here in Inchicore, Dublin. Our two flagship beers are Happy Days session pale and Yankee White IPA. The former has melon, passionfruit, mango and orange hop characteristics at the forefront, with a restrained malt background. The latter is a wheat IPA with a New World hoppy twist, brewed with lots of American hops and orange peel to give juicy, tangerine and stone fruit flavours and aromas.

Another very popular core Rascals beer is the punchy, fruity Wunderbar IPA: a wonderful beer brewed with new breed German hops. We have two seasonal core beers in Big Hop Red – a hoppy, piney red ale with plenty of zesty hop flavor – and Fruitropolis, the summer-favourite tropical pale ale which delivers a cascade of fruity flavours.

Jailbreak is the name of our core lager; it’s a traditional German style Helles lager with soft, bready malts and floral hops. This easy-drinking style is a prime example of a well-balanced lager: not overly hoppy and just a subtle maltiness to deliver that perfect taste and texture. The newest member of our Rascals core range family is Hazy In Love. Hopped with Citra, Mosaic and Ekuanot, not only does it have all the flavour and aroma profile you’d expect from those world-class hops, but we’ve added wheat and oats to give a lovely hazy appearance and smooth mouthfeel.

We also like to keep things creative with on-going seasonal beer releases. These tasty experimental beer styles keep Rascals at the forefront of consumer thinking and reinforce the brand credentials as an innovative brewery. Our barrel-aged beer programme has resulted in a range of exceptionally good quality beer, having been matured in the likes of bourbon, Chardonnay, Sangiovese and Pinot Noir barrels.

With two special limited-edition beers almost every month, we offer craft beer lovers an exciting and bold range of brews with everything from a rice lager with lemon and lime zest to a grapefruit Brut IPA to a chocolate salted caramel stout. We also utilise a 250L pilot kit in order to continue developing exciting new beer recipes. Rascals HQ is the only brewery, taproom and pizza restaurant in Dublin city.
