The Full Story
This Saison started life as our Project Sour Series #2. It was kettle soured with lactobacillus and most of the batch was kegged and sold back in October 2016. 200L was added to our Chardonnay barrel and aged. A few of you tried this beer at the Alltech Craft Beer fest in February 2017 after it had aged for 4 months. We decided to age her a little while longer to really see how the beer would change during it’s time in the barrel.
This Saison is now very Chardonnay-esque, with hints of oak, a sour funk flavour, and a tart, crisp finish. It goes really well with food so we recommend having this one with your Sunday Roast or mid-week curry!
